Reply:personally I don't like leggings with boots (yes, even uggs) , but according to most fashion magazines, it seems like it's in style now. I do like the miniskirt though as long as it's not too short, nobody likes a mini skirt that lets people see your *** though, so when it gets too small trash it :) I'd also suggest a fir vest or something, if you wear a summer looking tank top, it'll make the uggs look kinda out of place :). hope I helped

Bluing...lots and lots of bluing. It is a whitener you can purchase at most stores. But before you do...is the horse hair on a horse? Because if you want to dye a horse violet you might want to think a moment about what the horse would think of that. Might I mention animal cruelty. But if you just have a bit of loose horse tail hair definitely use bluing.

4 tbsp butter, melted


25g/1oz pecan nuts, chopped


75g/2½oz ginger biscuits, crushed


For the cheesecake filling


75g/2½oz chestnut purée


4 tbsp double cream


3 tbsp sugar


150ml/5 fl oz/¼ pint double cream, whipped


100g/3½oz mascarpone


50g/1¾oz white chocolate, melted


For the raspberry coulis


100g/3½oz raspberries


½ lemon, juice only


2 tbsp caster sugar


To serve


chocolate, grated


pecans, chopped





Method


1. For the cheesecake base, mix together all ingredients in the cheesecake base mix. Place the mixture in the bottom of a medium metal chef's ring, on a plate.


2. For the cheesecake filling, in a large bowl beat the chestnut purée with the double cream and sugar.


3. Fold the whipped cream, mascarpone and melted white chocolate into the purée and fill the chef's ring to the top.


4. Remove the metal ring.


5. For the raspberry coulis, in a small blender add the raspberries, lemon juice and sugar, blend for one minute.


(6. Alternatively you could place the mousse mixture into a tall glass and drizzle with the coulis.)


7. Serve with grated chocolate and chopped pecans.

For the chestnut ganache


142ml/5fl oz double cream


½ tin chestnut purée


2 thick slices ready-made ginger cake


For the chocolate sauce


50g/2oz chocolate


50ml/2fl oz double cream


stem ginger ice cream, to serve





Method


1. To make the ganache, whisk the cream until it holds soft peaks, then fold through the chestnut purée.


2. Sandwich half the ganache mixture between the two slices of ginger cake. Add the remaining ganache to the top layer.


3. For the chocolate sauce, melt the chocolate in a pan with the cream, then pour over the ginger cake layers.


4. Serve with a scoop of ice cream

For the chestnut mousse


150g/5¼oz chestnut purée


4 tbsp double cream, whisked


3 tbsp sugar


3 tbsp mascarpone


1 tbsp icing sugar


½ tsp vanilla essence

25g/1oz pecan nuts, chopped


For the raspberry coulis


100g/3½oz raspberries

Method


1. To make the chestnut mousse, in a bowl mix the chestnut purée with double cream and sugar to form a smooth paste.


2. Fold through the mascarpone, icing sugar, vanilla essence, biscuits and nuts.


3. Shape into quenelles and place onto a plate.


4. Garnish with the icing sugar and mint.


5. For the raspberry coulis, in a small blender add the raspberries, lemon juice and sugar. Blend for one minute.


6. To serve the chestnut mousse, pour the coulis around the outside of the plate.





or Chestnut and red wine pate


1 tbsp olive or groundnut oil


1 small onion, finely chopped


1 clove of garlic, crushed


pinch dried thyme


150ml/¼pt red wine


150ml/¼pt vegetable stock


100g/4oz chopped chestnuts (cooked weight)


100g/4oz chestnut purée


75g/3oz wholemeal breadcrumbs


1 tbsp brandy


10-15ml/2-3 tsp soy sauce


salt and freshly ground black pepper





To serve:


fresh herbs, crackers and a fresh green salad





Method


1. Heat the oil in a saucepan, gently cook the onion and garlic with the dried thyme until soft.


2. Add the red wine and vegetable stock and bring to the boil.


3. Remove from the heat and stir in the chopped chestnuts, chestnut purée, breadcrumbs, brandy and soy sauce. Season with salt and pepper to taste.


4. Cook over a gentle heat until thickened. Spoon the pate into individual ramekins, smooth the surface and then chill in the refrigerator until required.


5. Serve garnished with fresh herbs, with crackers and crisp green salad leaves





or Chestnut and chocolate ice cream with apricot sauce


For the ice cream


225g/8oz quality plain chocolate


60ml/4 tbsp maple syrup


225g/8oz canned chestnut pureé


500ml/18fl oz double cream, whipped


30ml/2 tbsp kirsch


3 free-range egg whites (optional)


225g/8oz whole tinned chestnuts in syrup, drained (save a few for decoration)


For the sauce


450g/16oz tinned apricots in natural juice


30ml/2 tbsp apple juice concentrate





Method


1. For the ice cream, melt the chocolate into the maple syrup over a pan of hot water or in a bain-marie. Blend well together and stir into the chestnut pureegrave;. Beat in the cream and kirsch. (Whisk the egg whites until stiff and then fold into the mixture, if using.)


2. Freeze for two hours in a shallow tray covered with foil. Meanwhile, make the apricot sauce.


3. Scrape out the ice cream mixture and blend in a mixer until smooth. Put in a bowl and stir in the chopped chestnuts. Spoon into a mould, cover and freeze for 30 minutes before serving. Loosen the mould by slipping it into hot water. Turn onto a serving dish and decorate with reserved chestnuts (halved) and apricot sauce.


4. For the apricot sauce, strain the apricots from their juice. Place apricots and apple juice concentrate together and blend in a food processor until smooth.

Ingredients


50g/2oz plain chocolate


50g/2oz unsalted butter


2 free-range eggs, separated


a good pinch of cream of tartar


50g/2oz sweetened chestnut puree


12.5g/½oz plain flour


1 tbsp granulated sugar





For the topping:


50g/2oz plain chocolate, grated very finely


350ml/12fl oz double cream


4 tbsp (approx) coffee liqueur


chocolate coated coffee beans (optional)





Method


1. Preheat oven to 180C/350F/Gas 4.


2. Grease and line a 20cm/8in loose-bottomed cake tin.


3. Break the chocolate into small pieces and place it with the butter in a bowl over a pan of gently simmering water and stir until melted and smooth.


4. Place the egg yolks, chestnut puree and flour into a large bowl and whisk together. Stir in the melted chocolate and butter mixture.


5. Whisk the egg whites and cream of tartar together in a grease-free bowl until they form soft peaks. Then gradually sprinkle on the granulated sugar and whisk the mixture until stiff.


6. Gently fold the egg whites into the chocolate mixture using a metal spoon. Pour into the prepared cake tin and level the top.


7. Cook in the preheated oven for 35-40 minutes. Allow to sit for 5 minutes then remove from the tin and leave to cool on a wire cooling rack.


8. To make the topping, whisk the double cream until stiff and gently fold in the coffee liqueur.


9. Spread a layer of cream over the top of the torte and then, using a piping bag and star nozzle pipe rosettes around the edge of the torte. Sprinkle the grated chocolate over the centre and if liked decorate the edge with chocolate coated coffee beans.


10. Chill for at least 2 hours or until required.

Reply:They have special cleaners at big anchor stores where ever they sell Uggs.I have heard that if you take a soft cloth and some white vinegar. Moisten the cloth with the vinegar and rub over top the stain. they will be stiff though. That's what i hate most about uggs when you clean them =/

marge is right. color does not remove color. semi permanents only deposit color they cannot lighten because they do not chemically change the hair, which means that they do not open the cuticle as permanent color does. you can however use a toner or semi permanent color to cancel out the brassyness in your hair. permanent colors will lighten the hair as they open the cuticle for the color to get in and out. hope this helps. as forcanceling out the brassy ness your stylist should be able to help, remember that you need something on the cool side of colors to cancel out the brassiness. adding a warm tone will only make it worse. cool colors are purple, blue, etc. toners are usually not that expensive the runanywhere form 20-30$ and make sure that you use color safe shampoos. anything with oils like jojoba oil, avocado oil ect. will strip the color from your hair. good luck!

ONLY bleach will lighten hair, colours are only formulated for darkening hair, and bleaching won't "nuke" your hair as you put it, unless you are really inexperienced and use it incorrectly which i am guessing you are considering you think that colour will lighten colour, it's a very famous saying in my line of business - "colour will NOT lighten colour"

Well, if you go to the Bocognano Chestnut Festival in Corsica they'll probably tell you that theirs are the best.





Then again, in Collobrières in Provence where the Confiserie Azuréenne makes candied chestnuts they may disagree.





Then again Clement Faugier in Privas also turns out some good chestnut products so maybe they're the best.





Truth is that the leading area for the production of chestnuts is in the Ardèche region in the Rhone-Alpes. whether they are the "best" is, I suppose, a matter of opinion.

What purpose does the chestnut serve on a horses leg?

The early ancestors of the modern horse walked on several spread-out toes, an accommodation to life spent walking on the soft, moist grounds of primeval forests. As grass species began to appear and flourish, the equids' diets shifted from foliage to grasses, leading to larger and more durable teeth. Reply:The chestnut serves no purpose to the modern horse we all know today. It has been left over from evolution, when the horse was a toed animal, the chestnuts were its little toe and the ergots it big toes, the other 3 toes formed the hoof. This is what I was taught when I was training and it makes sense to me.

i dont think there is really a difference. they all have red in there coats.
Reply:Some breed associations don't recognize sorrel as a color, so everything is registered as chestnut. The stock horse breeds like quarter horses, paints, appys, etc recognize sorrel as a different color than chestnut.





Sorrel is usually a lighter, more orange shade, and the mane and tail are usually the same color, or lighter (like with flaxen in it).





Chestnut is usually a darker, more red shade and the mane and tail will typically be the same color, or slightly darker (although you can get a chestnut with flaxen mane/tail, but its not as common).





So you see a horse the color of a new penny....sorrel.....if you see a more burnt reddish brown, call it chestnut.

Reply:According to the Jockey Club (Thoroughbred Registery) there is ONLY chestnut. However, AQHA and APHA define Sorrel as a RED horse with the same shade of legs (Unless they have white) as the body colour and it can have a blonde mane and tail. Chestnut is much less RED in the coat. Think Hershey's milk chocolate colour.

i did it the other way round, i had bits of my hair bleached, then dyed it red...it went orange...you should probably just try to wash out the dye first...i'd recommend using anti-dandruff shampoo's and also the likes of soap to remove the colour, then get it bleached.

It is really hard to strip out any kind of colour in order to go lighter, and even us "Professionals" struggle as the end result can be really unpredictable.


At best your hair might go orange, it could go green, at worst it could break off leaving you with unsightly tufts!


My advice is to go and see a good hairdresser, one that has a specialist colour technician, and see what they think. A lot depends on your natural hair colour, depth of tone etc and of course the overall condition of your hair.


Please, please, do not try to do this yourself at home unless you are absolutly 100% sure of the outcome!

Reply:It will almost DEFINITELY go orange! Go to a salon and ask for the color you want. They will strip the old dye out and bleach your hair (safely!) and tone it for you to get it the correct shade of blond. You can buy color stripper and bleach at beauty supply stores like sally's but I wouldn't recommend it. Leave this one up to the professionals!

Reply:You can't just put a blonde dye on top of what you have - that will turn the hair orange because it won't be strong enough to lift the color.





The only way to go blonde is to bleach it completely - it might even take a couple processes, and then re-dye with the right blonde color.

Prepare the filling: In a bowl, mix the marron glacés (or the roasted chestnuts) with the rum and let marinate for 20 minutes. Melt the butter in a small pot and let it cool. In a food processor, whip egg whites to soft peaks. Separately, whip the yolks with sugar until they turn a very light yellow and start forming ribbons. Add the all-purpose and chestnut flowers, the melted butter, and fold in the whipped egg whites. Sprinkle some flour on a work surface and roll the dough to a 12-inch circle. Line a 9-inch pie pan with the dough, press the dough into the pan, and trim the edges. Fill the dough with the marinated chestnuts and pour in the filling. Bake the pie until set, about 45 minutes to 1 hour. Sprinkle with powdered chocolate and garnish with a few extra marron glacés.

Rough shot I would say about 340 years. there was one in the paper down here a while ago and its like a wishing tree, anyway they did a core sampl with a circumference of 24 feet and this was 290
Reply:I know of a rough guide which I was told applied to oak trees but maybe it would apply to a chestnut tree as well and that is that a tree puts on approximately 1 inch of growth every year, some years it will be less and some more depending on conditions. therefore a tree that measures 100 inches in circumference at 4 ft from the ground is appoximately 100 years old.

Trying to guess the ring size to work out is near on impossible as the thickness of tree rings varies throughout the trees life, sometimes they are very close together almost joined at times indicating a very poor/ slow growth period or they can the tottal opposite showing a high growth rate.So saddly the only is to cut the bugger down but i wouldnt, its obviously been there a lonf time and so it should remain for the next person to come along in 30 or 50 years and ponder its age.

Sounds like your tree could be very close to its maximim size. I'd have to say it's 350 years - give or take a week or two.

If you have a specialty store that sells those type of foods, you may have to buy just the sweetened chestnut paste, and what you do is open the tin, a lightly warm the mixture in the microwave, if your friend is adding flavours or liqour this is the best time, beat it smooth even a bit of icing sugar and vanilla is fine, then fold in a bout 2 cups of fresh whipped cream, packaged like Dream Whip or liquid like Rich's and even a regular tub of Cool Whip is fine.





We had a device to squeeze it threw, and make mounds, that is why the name for it in french is "Mont Blanc" after the highest French Alp. If you can also find glazed chestnuts known as marron glazee, they are a nice decoration.

Can bacon wrapped water chestnut appetizers be made or assembled ahead and frozen and still turn out well?

I am a former chef and have made them and the ones with chix livers for freezing, my suggestion is rinse the WChnuts, and blanch the bacon, bring a small pot of water to the boil, cut the strips of bacon in half, drop them in for 30-60 seconds, drain them and cool them under cold water, wrap the chestnuts ( Iuse plain round toothpicks not the coloured ones) and place them on a cookie sheet or flat pan and freeze them, when solid, put them in a doubled Ziplok bag until you need them by freezing them and then bagging them you can take out a few and leave the rest for later, even inexpensive plastic containers from Dollar Giant or discount stores work, you can do this for sausage rolls in puff pastry, profiteroles, cheese puffs and mini quiches or pizzas.

OOOOh Rumaki. One of my family's favorites. I don't think that freezing them would be that great of an idea. I think the longest I would make them ahead of time would be 2 or 3 days and just let them marinate in the fridge.
Reply:I can't answer your question, but I make lil' smokies wrapped in bacon with brown sugar sprinkled over the top. They are to die for, I tell you. They are a hit at every party I have ever taken them too. And they can be made ahead of time, frozen, refridgerated, then cooked.
Reply:yes you can freeze them, it would be better if you assembled them ahead, don't bake them, taste better when freshly baked, but if time is at play you can precook them half the time then freeze them, to me bacon doesn't taste as good when you heat it after it has been cooked thoroughly.

Where can I get chestnut flour in Vancouver, BC?

When I worked as a sous chef at the Hotel Vancouver back in the 1980's knowing now that the old Woodward's is long gone that would have been one suggestion, but that is not an option, find an Italian specialty store, someone that sells quality fine Italian products, like cheeses and vinegars.





Like buckwheat flour, they use it to make a savoury and sweet pasta dish, it is very fine, beige in clour, it has to be mixed with wheat flour for gluten reasons, check the Yellow Pages and look under Delis or Specialty Food store, the Bulk Barn might have it to, no harm checking?

Step OnePreheat the oven to 425 degrees F.





Step TwoClean off chestnuts.





Step ThreeUse a sharp paring knife to cut an X into one side of each chestnut, or prick chestnuts with a fork to allow steam to escape.





Step Four Arrange chestnuts on a baking sheet or in a shallow pan, with the cut or pricked sides up.





Step Five Roast in oven for 15 to 25 minutes, or until chestnuts are tender and easy to peel.





Step Six Peel nuts when they are cool enough to handle, and enjoy

set oven to 425 and take the chestnut, creat a slit in the middle of it (don't go all the way through) and back until soft (maybe 20 minutes of so)

Reply:Have you tried toasting them? Try that. You can even do it in the microwave. Add salt and some butter. I don't remember for certain how long to cook them in microwave, start off with 6 mins. We use cajun seasoning on some, also, to give them a bite!

2 cups chestnut puree (made from fresh, or dried and rehydrated, or bottled chestnuts or canned unsweetened puree, if you n)


4 cups chicken stock or turkey broth


1/2 teaspoon ground nutmeg (try fresh grated!)


1/4-1/2 teaspoon ground cayenne pepper, depending on degree of hotness desired


1 cup whipping cream


salt


paprika, for garnish


minsed parsley, for garnish





Mix purée and stock in a large saucepan, and cook for 30 minutes over medium to medium-high heat, stirring occasionally.


Add nutmeg, cayenne, and cream, and stir well.


Do not let soup boil once the cream has been added, or it might curdle.


Serve in mugs, garnished with paprika and parsley.


TO MAKE PURÉE: If chestnuts are fresh, cut an X in each one and then simmer in water to cover for 15 minutes or roast in the oven 15 to 20 minutes at 375°F.


Peel chestnuts and purée, adding a bit of the stock if necessary.
